DIETING DOWN: HEALTHY STUFFED RED BELL PEPPERS

Dieting has officially sucked me in the health kick zone, so now I am super motivated to eat healthier and yes, cook if I have to. Case in point: I made stuffed red bell peppers today for the first time!

Trust me, I’m no cook. But, I try to cook when I can. I weighed myself today and I’m down to 139, which means I’ve lost 6 pounds in 4 days! Whoot! Whoot!

DIETING WILL MAKE YOU GRUMPY

Dieting does make you grumpy, because you are on such a low-calorie diet. When you strip all the soda and junk out of your life that you’ve been used to, you can get annoyed easily.

Lately, Ariabella has been getting bored super easy and I find myself running out of the house just so she doesn’t destroy it. Today, when making meals my daughter wouldn’t stop clutching at my legs. It was super annoying. But, this is life with a toddler.

DIETING MEANS COOKING HOME COOKING

If you’re not on the baby-food diet and think it’s ridiculous, hey, I don’t blame you. The way to lose weight is to eat a strict diet that you have control over. This might mean that you may have to get out the chef’s hat and cook more. I know I never liked cooking or ever considered myself to be one. But, it’s nice to eat healthier.

MY HEALTHY STUFFED BELL PEPPERS

So, I did juice or eat a purée diet in the morning and between lunch and dinner. I did have a spicy
tuna salad for lunch and a meal for dinner. Today’s dinner was stuffed red bell peppers with 99% fat-free ground turkey meat and veggies mixed.

INGREDIENTS

  • LARGE RED BELL PEPPERS (1 PER PERSON)
  • 99% GROUND TURKEY
  • BROCCOLI RICE
  • CAULIFLOWER RICE
  • DICED TOMATOES
  • SLICED MUSHROOMS
  • CHOPPED BLACK OLIVES
  • TOMATO PASTE

You mix all the ingredients together and then stuff large red bell peppers with the ingredients. I then put it in the oven for 365 degrees for about 1 hour and 10 minutes. I had enough ground turkey meat, and the rest of the veggies to mix together and make meat loaf. So, today, I wound up making 2 meals in one shot. It’s the easiest way to prepare meals when you can cook more than one meal and just knock it out for the next day.

Dieting is no easy task, especially running a home and being a mom. I think that you can get everything done and then some. But, it takes juggling and planning ahead. Dieting requires dedication and understanding that it’s not “dieting” per say, it’s simply a lifestyle change.
